1 bunch of kale, rinsed and cut into small pieces
2 tbsp & 1 tsp lemon juice
2 tbsp olive oil
¼ cup crumbled goat cheese
1/8 cup walnuts
½ tsp agave nectar*

* Optional

In large bowl, take 1 tsp of lemon juice and massage kale with hand for about 1 minute to soften.

In separate dish, mix olive oil and remaining lemon juice together.
Add agave if using it.
Pour liquid onto kale and stir. Add nuts. Sprinkle goat cheese on top.

Can be served chilled.

Kale is a leafy green vegetable that belongs to the Brassica family, a group of vegetables including cabbage, broccoli, and Brussels sprouts.  Foods in the Brassica family, however, are cautionary for some with thyroid issues.
