1 bunch of kale, rinsed and cut into small pieces
2 tbsp & 1 tsp lemon juice
2 tbsp olive oil
¼ cup crumbled goat cheese
1/8 cup walnuts
½ tsp agave nectar*
In large bowl, take 1 tsp of lemon juice and massage kale with hand for about 1 minute to soften.
In separate dish, mix olive oil and remaining lemon juice together. Add agave if using it.
Pour liquid onto kale and stir. Add nuts. Sprinkle goat cheese on top.
Can be served chilled.
